I made AB's Cocoa Brownies again (I was very proud; the last pan lasted a week). I had to make an adjustment to the recipe, though, because I only had 1 cup of cocoa, rather than the requisite 1.25 cups. (I was standing in the baking aisle today looking at the cocoa, too.) So I made up the shortfall with an extra quarter-cup of flour. I also used large eggs instead of jumbos. They taste lighter than the first batch, but I think before I decide to change the recipe for good, I should try making them with the large eggs and the required amount of cocoa. They're tasty, though, and that was the goal.

Ooh... also, we tried the onion ring coating on boneless pork chops tonight. They were very tasty, but the coating slipped right off. I think maybe I need to either skip the batter or skip the flour dredge. Anyone have any thoughts?

I'd try chilling the meat before rolling it in flour, then an egg wash, then the outside coating.

It came straight out of the fridge, into the flour, then a buttermilk batter, then the breading. That's the procedure that has issues.

Yupperz! I made a batch of those brownies the other day. Truly evil. I ate three and then took the rest of the batch up to the main office of work and let the IT Geeks have the rest. The foodie director thought I had used some exotic chocolate in them. *giggles* (Nestle cocoa powder)

heh... I didn't even use Nestle's or Hershey! I used the crappy store brand.

Sometimes chilling it with the coating on for a short time helps as well. I do that when I make fish and chips and also with fried chicken.
